Hong Kong Style Egg Tarts

Style Egg - Hong Kong It is a very simple dish; it is also a kind of custard tart pastry very common in Asian countries.

  • 1 cup confectioner’s sugar
  • 3 cups flour
  • 1 cup butter
  • 1 beaten egg
  • 1 dash vanilla extract
  • 2/3 cup white sugar
  • 1 ½ cup water
  • 9 beaten eggs
  • 1 dash vanilla extract
  • 1 cup evaporated milk

1. Mix the confectioner’s sugar with flour, and then add the butter with a fork until it is in small crumbs. Add the egg and vanilla until dough is formed, the texture must be slightly moist.

2. Once the dough is not too moist or too dry, form balls with it, press the balls into a tart molds, be sure that every mold bottom is covered and that the dough of the sides is higher than the mold side

3. Preheat the oven at 230º C, mix white sugar and water into a sauce pan, bring it to a boil, cook the mix until the sugar disappear, remove from the heat and cool it at environment temperature.

4. Strain the eggs in a sieve and add it to the sugar mixture and whisk it. Add vanilla and milk and once again use the sieve, once done you can add the mixture to the shells.

5. Bake the tarts for about 15 to 20 min in the preheated oven, be sure that the dough is golden brown and the filling is puffed up a little bit.

6. Do not serve too hot!
